Salt & Pepper, to Taste
Cook the diced bacon in a pan over medium heat until crisp.
Remove and drain, reserving a small amount of fat.
In the same pan, combine corn and cook briefly to heat through.
Stir in bacon- remove from heat and cool completely.
Add the cheddar and chopped green onion- season to taste.
Place about 2 heaping tablespoons of filling in each empanada wrapper.
Fold and seal edges.
Cook by frying or baking until golden brown and heated through.
Combine sour cream, garlic, and salt.
Mix until smooth. Chill until ready to serve.
Serve hand pies warm with garlic sour sauce.
