RECIPE: Green Goddess Griddle Fried Rice

INGREDIENTS

FRIED RICE:
3 cups Good Grains Kale & Ancient Grain, Simplot, VE 072244

GREEN GODDESS DRESSING:
1 cup Mayonnaise, Ventura, VE 011790
½ cup Sour Cream, Daisy, VE 074568
¼ cup Basil Pesto, Armanino, VE 073106

1 tb Chopped Fresh Parsley, Western, VE 007185

DIRECTIONS

On the flat top, sauté 2 cups sliced zucchini, snap peas, green beans and onion.
Add 3 cups of Good Grains kale & ancient grain mix and season to taste- stir in 1 cup of baby spinach and remove from heat.
For the green goddess dressing, mix 1 cup of mayo, 1/2 cup of sour cream, 1/4 cup of basil pesto, 2 tb lemon juice, and 1 tb chopped fresh parsley together- season to taste.
Plate, garnishing with 1 oz green goddess, ¼ of an avocado sliced, and 2 tb of toasted pumpkin seeds.
