RECIPE: Grain Salad with Ham and Edamame

INGREDIENTS

1 tb Butter, Plugra, VE 075157
¼ cup Shallots, Diced, Pro*Act, VE 003366
1 tsp Garlic, Minced, Pro*Act, VE 007099

1 ½ cup Ancient Grains and Kale, Good Grains, VE 072244
½ cup Hickory Smoked Ham, Diced, Jones Dairy, VE 073435
1/3 cup Edamame, Simplot, VE 075119
3 tb Shredded Parmesan, Cortona, VE 074062
3 tb Parsley, Chopped, Western, VE 007185
1 ½ tsp Apple Cider Vin, Woeber’s, VE 046001
2 tb Pistachios, Roasted and Chopped, Ferris, VE 021600
Salt and Pepper, to Taste

DIRECTIONS

In a pan with good surface area (or on a flat top) melt the butter and diced shallots along with a pinch of salt- cook until they begin to soften.
Add the garlic and thyme and cook, until fragrant.
Add the rice and ham- stir, then lightly press evenly into pan so the rice and ham cook evenly and become slightly crispy.
Fold in the edamame, vinegar, salt and pepper.
Combine ingredients together and cook for 1-2 minutes, then remove from heat.
Plate, garnishing with chopped pistachios, extra parmesan, and parsley.
