Fried Chicken and Waffles with Cinnamon Butter and Hot Maple

INGREDIENTS

1 piece Crispy Chicken Filet, Brakebush, VE 060036
1 piece Pearl Sugar Waffle, Avieta, VE 057658
2 tb Whipped Butter. Grassland, VE 075109
1/8 tsp Cinnamon, McCormick, VE 071918

HOT MAPLE:
1 ½ cup Maple, Commodity, VE 020987
1 tsp Kosher Salt, Diamond, VE 066782
½ tsp Cayenne, McCormick, VE 071901
½ tsp Paprika, McCormick, VE 071912

DIRECTIONS

For the hot maple sauce, combine the maple through the seasonings in a saucepan on a medium burner.
Heat the ingredients, stirring occasionally- do not boil.
Cook for 4-5 minutes, then, strain through a coffee filter to remove particles, or serve as is.
Heat the waffle using the oven at 350° F for 8-10 minutes, until heated through and lightly crisped.
Meanwhile, fry the chicken until cooked through and drain well.
Plate the chicken atop the waffle, then dish a 1 oz.
scoop of whipped butter onto the chicken- dust the butter with a pinch of cinnamon.
Drizzle the chicken and waffle with 2 oz. of hot maple- garnish with fresh cracked black pepper.
