GORGONZOLA GREEN ONION BUTTER:
1 cup Butter, Plugra, VE 075175
1 cup Gorgonzola, Belgioioso, VE 074156
4 Garlic Cloves, Pro*Act, VE 007099
5 Green Onions, Chopped, VE 006260
Salt and Pepper, to Taste
SANDWICH:
3 oz Cooked, Boneless Short Rib, Chopped or Pulled, Bonewerks, VE SPEC 090832
¼ cup Gorgonzola Green Onion Puree, see recipe above
2 pieces Texas Toast, Michigan Bread, VE 032999
1 tb Butter, Room Temperature, Plugra, VE 075175
For the gorgonzola green onion butter, in a food processor, combine butter, gorgonzola, garlic, along with a pinch of salt and pepper- process these ingredients until smooth.
Finally, add the chopped green onion and pulse in- check the seasoning.
Sandwich the short rib and the gorgonzola butter.
Add 1 tb of butter to the flat top or sauté pan, add sandwich on top of melted butter, grill each side of sandwich until golden brown.
Serve immediately.
