RECIPE: Cast Iron Seared Mesquite Campfire Blend

INGREDIENTS

1 lb Campfire Blend Veggies, Preferred Fresh Cuts, VE 005533
2 tb Canola Oil Blend, Divided, Corto, VE 048789
1 tb Mesquite Seasoning, McCormick, VE 071871
2 tb Butter, Grassland, VE 075107
1 tb Garlic Pesto, Armanino, VE 073432
Salt and Pepper, to Taste

DIRECTIONS

Toss the veggies with 1 tb oil blend and the mesquite seasoning- mix well.
Heat the remaining 2 tb oil in a cast iron pan over medium high heat- sear the seasoned veggies in the pan, cooking until crisp tender.
Remove pan from heat- add butter, pat and garlic pesto.
Toss veggies to coat, and season lightly with salt.
Serve Immediately.
